http://www.mariobatali.com http://www.luparestaurant.com/ In this installment of Mario Batali presents Chef Darren Weston of Lupa Restaurant makes there famous oxtail ragu with fresh garganelli. Chef Darren Weston places the oxtail in a brine solution (containing salt and sugar) for up to two days. Next he chops up carrots, celery, and onions fairly small in order to give body to the dish. Then he makes the soffrito, which is created by placing carrots, celery, and onions into a food processor and blended into a fine substance, almost like a paste. Next he places it in a pan mixed with olive oil and slowly cooks it at about 200/250 degrees. Then he begins building the ragu by taking a heavy bottom dutch oven, putting it over medium-high heat, and adding a little bit of olive oil. Just before the smoke point he places in the oxtail to get a sear and removes it. Then he adds the chopped up carrots, onion, and celery from before to the same dutch oven. He sautés this mixture, seasons with salt and pepper, adds some white wine and reduces it down. Then he adds the soffritto sauce, some basic tomato sauce, and whole cherry tomatoes and stirs it all together. After the ingredients are all mixed he adds the oxtail back in. He then proceeds to add a little bit of water, brings it to a boil, and then reduces it down. He lets it go uncovered, simmering for a couple of hours, and until the meet is very tender and is separating from the bone. Then, to make the pasta use a 2:1 ratio of flour to egg yolks (just the yolks). Add a little bit of olive oil. mix, and roll the dough out as thin as possible. Using a pizza cutter or knife cut the dough into equal size squares. Then, using a little wooden board wrap the square around a straw and roll it into a tube shape. Then, once the meat is falling off of the bones, pick off all the meat and discard the bones. Cook the pasta. Place the oxtail ragu sauce in a pan and add butter, fresh parsley, celery leaves, and a little bit of orange zest. Then, add the cooked pasta and a little bit of the cooking water to the pan. The film is being created from stories of the Italian-American community that has called the North End home for over 100 years. If you have old photos, home movies or newspaper clips, the filmmakers would love to see them. The finished product will be a 50 minute film. The project is being produced by Maureen McNamara's Kendall Productions. A grant from the City of Boston's Baxter Fund helped support the nine minute trailer shown in this post that was created from hours of interviews with North Enders from around the Boston area. Stick to the recipe rigidly, the quantities are very important for successful results 2. Use scales for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate 3. Use proper white bread flour with at least 12% protein, check the ingredients list on the side of the flour bag, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour, plain or all purpose flour is not strong enough for making bread. 4. Cookie cutter (9cm in diameter) Pastry bag (Or a zip lock bag if you don’t have one!) STEP ONE – PREPARING THE PASTRY: 1. Sift the flour into a mixing bowl, then add the salt, cocoa, coffee powder, icing sugar and cinnamon 2. Next, add the lard 3. Break the egg into the bowl and mix everything together really well using your hands 4. Adding just a small amount at a time, pour in the Marsala & white wine vinegar, and mix it through. Do this gradually to make sure the dough remains soft and firm, and you might reach the consistency you need without adding all of these liquids 5. Add a small amount of flour to your work bench an continue to knead the dough on top 6. All of your ingredients should have come together at this point and it will feel a bit harder than bread dough 7. Wrap it in cling film (glad wrap) and leave it in the fridge for 1 hour STEP TWO – PREPARING THE FILLING: 1. Dice the glazed oranges & lemon into small pieces 2. Cut the cherries in half 3. Strain the water out of the ricotta and put it into a mixing bowl 4. Add 200g sugar 5. Mix well using a whisk until the sugar starts to break down 6. Add the glazed fruit, leaving the candied cherries aside for later 7. Cover the ricotta mix using cling film (glad wrap) and let it rest in the fridge for at least an hour FRYING THE CANNOLI SHELLS 1. Remove the dough from the fridge and cut a piece from the end 2. Add some flour to the work bench, place the dough in the centre, and begin to spread it out into a circle using a rolling pin. It should be no more than 1-2mm thick 3. Using a round cookie cutter, cut out a circle, then lift it out and wrap it around one of the metal tubes until the ends meet and join the two together using a small amount of egg white 4. Repeat this, covering all of the metal tubes 5. Once the oil has reached 170-180°C, drop in two shells at a time, and allowing them to cook for around 2 minutes. Keep an eye on them, they should be brown but not burnt! VINCENZO’S TIP: If you try to fry more than two at a time, the oil will start to cool down and you won’t get a good result! 6. Only once the shells have completely cooled (this will take around 20 minutes), remove the metal tube and now they are ready to be filled! HOW TO SERVE The shells should only be filled just before you serve or they won’t stay crispy! Spaghetti Carbonara Servings: 4-6 INGREDIENTS 1 pound spaghetti 6 ounces pancetta or guanciale, cut into ¼" cubes 1 tablespoon extra virgin olive oil 1 tablespoon salt ½ tablespoon freshly ground black pepper 2 jumbo eggs, room temperature 2 egg yolks, room temperature ½ cup Pecorino Romano cheese, freshly grated ½ cup Parmigiano-Reggiano, freshly grated 1 garlic clove, peeled Garnish Italian parsley, chopped PREPARATION Bring a large pot of water to a boil. Once boiling, add the salt, then the pasta and stir to avoid sticking. Cook according to the time on the package, minus two minutes. Heat a large, tall sided frying pan over medium heat. Add extra virgin olive oil and the pancetta or guanciale, and saute until just turning crisp, stirring frequently. Smash the garlic clove with your palm and add to the frying pan with the pancetta. In a bowl or measuring cup, whisk the eggs with the egg yolks. Add the black pepper and half of the Pecorino-Romano, Parmigiano-Reggiano and stir to combine. Check the pasta for doneness, you want it to be very al dente. Take the frying pan off the heat. Add the pasta and about a ½ cup of pasta water to the frying pan with the pancetta. Add the egg/cheese mixture to the pan and quickly stir and shake the pan to avoid scrambling the eggs. To thin out the sauce, add more pasta cooking water, the starch from the water will make the sauce nice and silky!) Sprinkle over the rest of the cheese and parsley and stir until the cheese is melted. Serve Immediately!
